The new venue recalls a fancy café in Paris opened by the representatives of the Jewish community (by the way, France has the largest Jewish community in Europe). Hence there is the female name Rebecca ('charming, captivating') in the project’s name, which is of Hebrew origin.
The gastronomic trends of fancy cafés in Paris at the new Rebecca Bistro in Khamovniki.
Svetlana Drobot, restorer and co-owner of the BB Group (Tokyo Sushi, Oblomov, Osteria di Campagna, etc.), and chef Grigory Chunikhin, who launched together Linbistro and Ester, opened their third joint venture Rebecca Bistro on 13 February. Once again, the founders have chosen a location that is challenging but has great gastronomic potential: the bistro is located in Khamovniki, in the modern Sadovye Kvartaly residential complex.
Cuisine
The gastronomic options are less obvious, but no less fascinating. There are no openly national dishes, just subtle references, a fresh look at the subject and smart use of familiar ingredients. The menu offers a Raw bar with seabass ceviche, scallop crudo or beef tartare, easily understandable soups in smart comfort food style, and a good selection of main courses: tenderloin with aubergine and za'atar, veal cheeks with roasted beef bourguignon root, chicken with morels and potatoes, homemade pasta. Some dishes are served on vintage tableware - a distinctive touch in Svetlana Drobot's projects - brought back by the bistro team in luggage from Paris.
At the heart of the list of cocktails is the flavor, born of twists on classical combinations, and mandatory history. The Kir Royal interpretation is worth a look here, based on the author’s distillate of blackcurrant, complemented by a French sparkling, espuma litchi grape, and the Rebecca cocktail, referring to French perfumers, with a rich range of herbs and flowers that corresponds to a fragrance with a note of fresh croissants.
Rebecca Bistro’s wine list includes small French estates that continue the winemaking traditions of their ancestors, also consists of curious Mediterranean specialties and Middle Eastern classics.
